Cupcakes!

I’m sitting on my couch at home, wrapped in my cozy robe with Spiderman 2 on in the background, terrified that at any minute my internet is going to abandon me- it’s been a little hit or miss the past couple of weeks (I think the internet guard is just not used to so many devices in the same home trying to access the internet at the same time).

Anyways, I figured I probably had enough time to jump on and make a post. Hope you all had a chance to enjoy the AMAZING weather this weekend!! I’ll admit I spent less time outside than I should have, as I spent the weekend making visits- Saturday down in Hampton, and Sunday up in Loganville, which was the scene of my little cousin (who is basically my brother) turning 18. EIGHTEEN! I can’t even believe it. It seems like such a short time ago that he came to us at the age of 5….

Speaking of bithdays- last week, the lovely Lady Nutson (AKA- Traci, my Supervisor) celebrated HER special day, and to do it up right, I made some cupcakes. Lots of ’em. I used Food & Wine’s recipe for Mom’s Chocolate Cake, and frosted half of the cupcakes in their chocolate frosting. Just a hint- after mixing and mixing that frosting, I could NOT get it to lighten and become fluffy, so I let it sit in the fridge overnight, brought it back to room temperature the next day, and when I mixed again- VOILA! Perfect chocolate frosting!! I piped it onto the cakes, although, this frosting is just a LITTLE too thick to be comfortably piped. I think I had a slight sweat sheen on my face when I was done…

The other half of the cupcakes, I frosted in Martha Stewart’s Basic Buttercream, which I tinted pink, and topped with miniature brownies which I cut into into heart shapes. My kitchen was just a DISASTER after this bake-a-thon, but I think the end result was well worth it. Anything for Traci!!!

Please excuse the craptastic nature of the photos- I totally forgot to photograph these until they were sitting in the conference room awaiting their final destinations (AKA- the Media Team’s mouths), and I had to make do with the lighting and setting I had at the time!!
